Margherita Pizza Quesadilla

This Margherita Pizza Quesadilla was created one night, a few weeks ago when my sister approached me around 7 pm asking what we had planned for dinner. I hadn’t the slightest idea because we hadn’t planned anything, I hadn’t even thought about it. A fun fact about me: I love trying new things and I hate repeating the same thing over and over again, especially when it comes to food.

Most nights I take a  “last minute” approach to dinner.  the real problem is that I’m terrible at remembering to eat. I know, I know; that sounds insane! What kind of person doesn’t remember to eat? Is she a robot? Does she not know that food is energy?! You see, for me, mealtime despair is a neverending, age-old issue. When I think of preparing dinner I immediately feel a tiresome expression sink over my face.

Over the past year, I have become very particular about what I can and should not eat. I like to stay within my nutritional guidelines which means mealtime is better when I  meal prep. The other real problem is that I’m lucky if I find time to meal prep once or twice a month. So, what’s a woman to do? Que the “Last Minute” dinner options!

There are nights where I spend hours cooking nutritious dishes (Mostly From Pinterest of Course). Most of those recipes are delicious, adventurous, and fun to try but they’re also very time-consuming. Like I said; Sometimes I don’t think about dinner or lunch until it’s dinner or lunch time. I love having easy, go-to,  last-minute meal ideas for days where I don’t remember to meal plan or can’t find time to meal prep. This Margherita pizza Quesadilla is one of my favorite last-minute meal ideas.

Margherita Pizza Quesadilla Recipe
Instructions
Pizza Sauce
  1. Pour the can of fire roasted tomatoes into a medium-sized saucepan over medium heat
  2. Add 1 Teaspoon of Sugar to the Fire-Roasted Tomatoes
  3. Add Garlic Powder & Parsley to Fire-Roasted Tomatoes
  4. Cook the fire-roasted tomatoes over medium heat for 5-10 minutes, stirring and mashing until it's a it reaches a saucy consistancy.
Quesadilla
  1. Place a tortillia in a non-stick skillet over medium heat. Add sauce on 1 side
  2. Add mozzarella to the tortillia and fold it in half
  3. When the down-facing side begins to brown, flip the folded tortillia. It's done when the other side browns and the contents are melted.
